From a 12-hour-cooked mechoui to a mountain-trout fillet served beside the lake, Grup Xaluca's kitchens speak Moroccan first — and then welcome every guest in their own language.
Pillar 01
Our kitchens are anchored in the south of Morocco. Recipes come from the families of Tafilalet, the Atlas valleys and the kasbah villages — and they are cooked the way they have always been cooked: slowly, generously, and with respect for the season.
Whole lamb, rubbed with cumin and saffron, sealed in a clay oven and slow-roasted overnight — served on copper trays at the heart of the Moroccan dining room.
Lamb with prunes, chicken with preserved lemon and olives, kefta with eggs, vegetable couscous on Friday — recipes carried by our cooks from their own grandmothers.
Pigeon pastilla dusted with cinnamon and icing sugar; harira simmered with lentils, lamb and tomato; warm khobz from the wood oven, drizzled with our own olive oil.
Poured from height in three rounds — life, love and death — by a tea-master in white djellaba. The ritual closes every meal.

Travellers come to us from forty countries. We never disguise our food — but we listen. Salt is dialled, spice can be tamed, and our chefs trained in Marrakech, Paris and Madrid weave Mediterranean and continental moments into every dinner.
A nightly four-course menu in the International dining room — grilled sea bream from Agadir, lamb cutlets with rosemary, saffron risotto, citrus panna cotta.
Every menu carries clearly marked vegetarian, vegan and gluten-free dishes — and our chef will design a custom plate within minutes if your dietary need is more specific.
Mild tagines, hand-cut pasta, grilled chicken, fruit skewers — and a kitchen door always open to a curious young palate.
All our kitchens are 100 % halal. Kosher meals are arranged on request with 48 hours of notice. Allergen information is held by every head waiter.

Every evening at a Xaluca property unfolds in a different way. A long buffet under brass lanterns. A quiet à-la-carte dinner on a private terrace. A nomad feast inside the dunes. The choice — and the rhythm — is yours.
Live cooking stations every evening — tagines, grilled meats, pasta of the day, salad island, pâtissier corner. The Moroccan and International dining rooms each seat 350.
Reserved tables for an intimate dinner — a curated card of six starters, eight mains and four desserts, refreshed every season, paired with Moroccan and European wines.
Light lunches by the lagoon pool — grilled fish, salads, juices and ice-cold mocktails. A slow buffet breakfast on the open terrace, from 06:30 until late.
At our desert camps — Erg Chebbi, Merdani, La Belle Étoile — dinner is served on woven mats: tanjia of lamb cooked in the embers, vegetable couscous, mint tea and Berber music around the fire.
