Midelt is the kind of town most travellers pass through — a brief tea-stop between the desert and Fez. Our new property changes that. Set among the apple orchards that gave the town its nickname ("the Moroccan Annecy"), the hotel is the first of our addresses built from the ground up to a strict sustainability brief: low-rise pisé construction with local clay, photovoltaic roof, grey-water recycled to the orchards, and a kitchen sourcing 90 % of its produce within a 30 km radius. The building takes its proportions from the old kasr (fortified hamlet) of nearby Berrem — but reinterprets them in a contemporary, almost monastic register.
Twenty-eight rooms across two earthen-pisé wings, low and long like the local kasrs. Cedar floors, wool curtains woven in Aït Yahia, hammered-copper basins from the Marrakech medina, and woodburning stoves in every room for the winter — when Midelt regularly sees snow. A double-height library lounge faces the orchards.

A word from your host
I was born twelve kilometres from the front door of this hotel, in a village where every family had — and still has — an apple tree in the courtyard. We are building Xaluca Midelt the way my grandfather built our house: with the earth he stood on and the cedar he could reach with a ladder. Our rooms breathe in summer and hold their warmth in winter, because the walls are forty centimetres thick. Our wool comes from Aït Yahia, fifteen kilometres away. The trout on your plate is from the lake at Tirghest, an hour from here. Come and stay a few nights — long enough to see the apples ripen, the snow arrive, or the lamb cross from the summer pastures back into the village.
